Rachael Ray: Pizzaiola Ragu

I saw Rachael Ray make this on her show last week, and I thought that looks so good. It did not disappoint. I could see the disappointment on my husband’s face when I said we were having basically spaghetti with meat sauce, but I love spaghetti and we haven’t had it in a while. This recipe is not a regular spaghetti and meat sauce; I think it is more authentic. I felt like I was in Italy, but I wasn’t, wishful thinking!

Notes: I couldn’t find the straw-like pasta Rachael Ray recommends for this recipe, so I bought thicker spaghetti. I also did not add any beef broth, I felt like the sauce was pretty thin, so I didn’t think it needed it. I really did like this recipe, I thought it was very different, maybe it was the red pepper flakes. I liked the kick to the sauce, it was delicious! I also used dried herbs, except for the fresh parsley on top.

Rachael Ray: Super Sized 7-Layer Casserole

The husband and I were watching one of Rachael Ray’s shows from last week and she made this. We both thought it was interesting. I was very hesitant to try it, because don’t get me wrong this is some weird combinations in this casserole. But, it has a lot of things we really like, so why not throw them together? The interesting thing is usually the husband eats everything separately, yeah he’s one of those people. However, he’s not too picky about eating things together. So you may think we’re crazy because we tried it, but the end verdict was, we liked it!

Notes:This recipe could be titled “everything in your kitchen but the kitchen sink.” There are a ton of ingredients in this, and I had to use 3 bowls and 3 pans to make this, plus the casserole dish. So obviously I won’t be making this a lot because that’s a little too much clean up for me. I didn’t heat the beans in a pot, but in a bowl in the microwave, and I didn’t top it with olives; I don’t like them. I should’ve been nice and put them on the husbands, because I have them, but the baby was crying, you know how it is!
