Rachael Ray: Buffalo Chicken with Slaw

Tuesday, June 30th, 2009

This Rachael Ray recipe I thought looked good enough to try. My husband is a huge buffalo wings fan, so I like to make them in different ways. We’re not red cabbage or slaw fans, but I thought it wouldn’t hurt to give that a try either. The chicken was a hit, the slaw was a miss. This took a long time to cook, so make sure your chicken is thawed before you cook it!

Husband Says: “I don’t like red cabbage, I’m not going to try that. The chicken is good, moist, it isn’t hot though.”

Notes: I only made chicken breast for this recipe, and maybe I didn’t add enough hot sauce, or it wasn’t hot enough, not really sure. You could see the color in the marinade, just wasn’t spicy. I also forgot to get carrots, so our slaw was carrot-less. I thought the slaw wasn’t bad, but I couldn’t eat too much of it because the red cabbage is such a strong flavor. Overall, it was an okay meal. The chicken was very moist, after cooking for so long I was surprised.

Rachael Ray: Shrimp with Pancetta, Peas, and Shells

Monday, June 29th, 2009

I always pick Rachael Ray recipes that I make based on the ingredients, not the directions. Well, this is one wake up call, and I know I’ve said this before, I really need to read the directions on the recipes. But, for this one it had shrimp and peas; I don’t like shrimp, my husband doesn’t like peas, so I thought I’d half it and we’d both be happy without the ingredient we didn’t like. I didn’t realize the peas made the sauce, oops! Overall, I think we both liked it alright, not the best pasta dish I’ve ever had, but it wouldn’t be the worst either.

Husband Says:“It’s okay, I like grilled shrimp with Cajun seasoning better.

Notes:Well I followed the recipe, except I cooked the shrimp in a different pan, and reserved some of the pasta and served that topped with Parmesan cheese, then I left the shrimp off the rest of the pasta and covered it with the sauce. I did use bacon oven pancetta. I thought the sauce was okay, its not my favorite. It is different, but when you’re cooking a different recipe every day, what do you expect?
