Rachael Ray: Blackened Chicken Pizza
Wednesday, May 13th, 2009Here is another Rachael Ray pizza recipe, that personally I thought was so good. I really enjoyed this one! I had to hurry along dinner due to some obligations, so I fast tracked this recipe, it was ready in no time and delicious! If you want a change from regular pizza this recipe is for you!

Total Time: 25 minutes (mostly cooking time)
Husband Says: “It was okay, the crust was doughy.”
Notes:I regret not precooking the pizza crust, the outside of the crust was finished and turning brown, while the middle remained a little undercooked, but it wasn’t that doughy. I couldn’t find yellow tomatoes so I just used red and instead of making the chicken I used a bag of fajita chicken. I didn’t have much time, and my chicken was frozen, so I added the spices and chopped the strips up. I went to two stores to look for pepper-jack cheese in a block and I couldn’t find that either, so I just slices into squares and it melted nicely over the pizza. I might have added a bit of shredded mozzarella cheese I had on hand as well, you can never have too much cheese on a pizza!
