Rachael Ray: Chili Lime Okra

Okra is one of my absolute favorite things to eat! This Rachael Ray recipe out of her magazine last April I thought looked fantastic! It was fantastic. The little one even tried a few; I’ve been teaching him to like okra because I like it so much! This one cooks up fast. It would be a great side dish to a barbecue meal, or I eat okra as a snack!

Rachael Ray: Smoked Mozzarella and Chicken Sandwiches

This Rachael Ray recipe may have smoked mozzarella in the title, but I was more into the sauce you made to go over the chicken. The complete title is a little long for this blog, but the Italian Barbecue sauce was excellent. My favorite part of the sandwich. In fact, I didn’t even eat the bread, just the chicken with the cheese and barbecue sauce. It was an excellent dinner for a below freezing day!

Notes: If you’re going to buy a specialty bread for this sandwich, make sure you use the bread shortly after you buy it. I tried to soften mine up in the microwave, but it just never got soft enough to eat. I don’t mind a little crunch to my bread, but this one had a little much! I also didn’t use fresh mozzarella, I know story of my life, I just refuse to pay the extra money for it, and I had some in my fridge I needed to use up before the move next week.
