This Rachael Ray recipe is different. If you haven't seen it before; you're going to wonder what was I thinking? As I was making this one I thought, "What was I thinking?" Broccoli with nachos, those things really don't go together. However, I love broccoli, I love it with cheese, on my potatoes, plain, doesn't matter. Why not give it a shot. The surprising thing was, or maybe not so surprising, it was delicious! So while you might think you're crazy, and other people really might think you're crazy, don't knock it until you try it! You just might like it!

This is a great, fresh Rachael Ray recipe. I enjoyed this salad. I had to add more salt to the dressing then I would've like to, it was a little bland for me. I bet some avocado would've been great in the dressing. I may have to try that some time. I think you could add some other things to this one, red peppers, cheese, corn, cut up tortilla crisp. As for a simple salad, it was surprisingly satisfying and a good pre-packing meal!

Notes: If you’re going to buy a specialty bread for this sandwich, make sure you use the bread shortly after you buy it. I tried to soften mine up in the microwave, but it just never got soft enough to eat. I don’t mind a little crunch to my bread, but this one had a little much! I also didn’t use fresh mozzarella, I know story of my life, I just refuse to pay the extra money for it, and I had some in my fridge I needed to use up before the move next week.

Since he didn't eat anything else I was very pleased he had some of this. I really like Tortellini salads; I think I would rather eat Tortellini in a salad over in a marinara sauce or alfredo. It just seems to fit better for me. This is a nice quick cooking recipe when you're in a hurry, but you want something that taste good and fills you up!

Notes:I don’t think my tomatoes roasted very well. They tasted fine, just didn’t look like the picture in the magazine. I used fresh tortellini, I couldn’t find any frozen types. I also didn’t put in mozzarella, I just like that better melted. I did top it with a little Parmesan. I loved the green beans in this; so good! I also opted to clean more of my fridge out and heat up some cheese texas toast so it wouldn’t go to waste over making my own garlic bread.

This Rachael Ray recipe caught my eye in her December Magazine Index. It was listed as a web recipe. The husband bought some ribs from some students and they've been in our freezer for a while. It is perfect timing since I'm going to be leaving our fridge with our house, it's time to clean it all out. I made another cranberry ribs recipe in October, so he wasn't thrilled they were going to be close to the same. To my surprise when I opened the ribs, they were already cooked. So I ended up heating them up, then putting the glaze on some ribs, but not all of them. Everyone was happy!

This Rachael Ray recipe caught my eye in her December Magazine Index. It was listed as a web recipe. The husband bought some ribs from some students and they’ve been in our freezer for a while. It is perfect timing since I’m going to be leaving our fridge with our house, it’s time to clean it all out. I made another cranberry ribs recipe in October, so he wasn’t thrilled they were going to be close to the same. To my surprise when I opened the ribs, they were already cooked. So I ended up heating them up, then putting the glaze on some ribs, but not all of them. Everyone was happy!

Total Time: 45 minutes

Notes: Like I said, this was just used as a glaze on our ribs. I served this up with some potato salad and baked beans, it was good!

I know, this Rachael Ray recipe isn't really all that different. What can I say, but I love potato skins; I've been craving them. I've been craving a lot of potatoes lately, I just love them. The little guy loves potatoes too, so it is a win-win! Truth be told we took a little road trip to watch the Hubs team play so I needed to make something that was easy so you would have a recipe today! So that's why we have Parmesan Stuffed Potato Skins, but they were good, you should make them!

Total Time: 45 minutes or so, I lost track, longer then 30!

Notes: I only used 2 potatoes since there are 2 of us. Also I could cut the halves lengthwise again, after I had scooped out the inside. It wasn’t easy to do, and really I just said forget it cause it’s not like I was serving these at a party. However, if I were serving them up at a party, I’d probably cook the potatoes longer and be able to cut them. But I’m impatient so I used a little help from the microwave to get these babies soft. Oh, I also used pepperoni instead of salami, it was just too pricey for me to buy, and pepperoni is close enough for me; I like the taste better.
