Rachael Ray: Instant Chili Con Queso, A Texan’s Fondue

Saturday, October 31st, 2009

I choose this Rachael Ray recipe, A Texan’s Fondue in honor the Longhorns tonight! We are headed up to Stillwater to hopefully watch our beloved Texas Longhorns take on the OK State Pokes, yes I’m from Oklahoma, born and raised, but I married a Texan. Some battles you just don’t fight. Well, Texas isn’t the only reason I choose this recipe, I love a good chili con queso, Chili’s has my favorite. I’d say this recipe is pretty darn close, so give it a try while you’re watching your favorite team play!

Total Time: 20 minutes

Notes:I had some pretty recent rotel in my crock pot, so I added the cream cheese and the chili to it. It took longer then I thought it would to melt down the cream cheese, but like I said this was so good. It was hard to stop eating it!

Rachael Ray: Vicki’s Chicken and Grapes in Mustard Sauce

Friday, October 30th, 2009

This is a recipe that Rachael Ray makes because it’s one of her hubby’s mother in laws! This is the first time for it to appear here, but I’ve made it 2 other times and always really like it. I made a lot less because I cooked it later just for myself. It was delicious as usual. I know it may be a strange combination for you, but the cooked grapes with the mustard sauce is just divine!

Total Time: 30 minutes

Notes: I just made 1 chicken breast for myself. I cut it in half to speed up the cooking. I didn’t really measure my mustard and milk out. That’s right, I usually don’t buy heavy cream, because we have whole milk for the little one, so I just use that. I also didn’t buy any white wine for this, so I just omitted it. It was still delicious!

Welcome
I like to cook and post about it in this blog. In 2009, I cooked a Rachael Ray recipe everyday for my family. You can check out the featured receipe from 2009. Here's hoping this blog makes your lives a little less work and more enjoyable!
