Rachael Ray: Polish Smash

I would never make this recipe if the husband was home, he doesnt’ like peas, so when I saw this Rachael Ray recipe I thought it might be a good way to get the little guy to eat some peas. It worked, sort of well. Peas have never been my favorite thing to eat, but I love them mixed in with mashed potatoes. I liked this meal, and I’d say the little one enjoyed most of it!

Notes: For my sausage I used the cheddar sausage, because that is my favorite. Plus it reminds me of when I lived in Austria and we would eat cheddar sausages at all the Christmas markets. Good memories! I did do it a little differently then the book described, but same ingredients, just different method.

Rachael Ray: Crunchy Almond French Toast

A while back I made a Rachael Ray recipe for Almond French toast, and I loved it. This one had a little twist by adding cornflakes. I liked the other one much better. I felt like there was a lack in flavor, it just wasn’t sweet enough for me. I’m not a huge fan of french toast to start with, but I do like it sweet!

Notes: I cooked this toast entirely in the oven. All my skillets were dirty, and I didn’t feel like washing them out because, well let’s face it, I was lazy. I do think that the milk needs a touch of sugar, it would make this so much better! I didn’t make the fancy fruit topping, that’s just too much money to spend for myself. That probably would’ve made it sweeter!
