Rachael Ray: Individual Chicken Pot Pies

This Rachael Ray recipe was perfect. The little one and I stayed in all day to avoid the increasingly cold temperatures outside. It getting so cold there is nothing like a nice hot chicken pot pie for a warm dinner. I will say the little one ate none of his and opted for a grilled cheese sandwich, which isn’t to surprising. I really loved this one, I didn’t make it so individual because my puff pastry broke, I wanted to use one sheet instead of two, so I had to improvise. It still tasted so good!

Rachael Ray: Chili Mac for One

This is a simple Rachael Ray recipe for chili mac, and it makes a little bit more for one, but it doesn’t leave a ton of leftovers, which is good in my situation. I don’t eat a lot of chili mac, actually I don’t think I’ve ever made it before. I did enjoy it!

Notes: I forgot my jalapeno, which made me sad. We got home from our trip and I made out a menu and grocery list, that I’ll post soon, and ran through the grocery store without the little one. Made it back home in time for the hubs to take off. The joys of going to the grocery store alone! I also topped mine with a little extra cheddar!
