Rachael Ray: Margarita Melon Salad

This isn’t dinner, but you could serve it along side a sandwich, or something else lighter. With Fall just around the corner, this may be the perfect end to your hot summer nights!

Notes: I only used cantaloupe in this salad, and I used Strawberry Margarita mix. Don’t worry, it’s non-alcoholic so its safe for your kids. It just sweetens up the cantaloupe and the mint adds such a fresh taste!
- mix all together
- cube it
- cut the rind off
- cut in fourths
- remove seeds with a spoon
- cut cantaloupe in half
- cut mint
