Rachael Ray: Chorizo Stuffed Bread Bites

This Rachael Ray recipe reminded me of pigs in a blanket. I was excited to make these and I thought the baby would love them. The baby did love them so that was good. He used to eat everything, but apparently his appetite has dropped which is normal I guess. Don’t get me wrong when that boy is hungry he’ll eat, and eat a lot! These would be great for lunch or for dinner you might serve them with a green salad. Or I’m big on football parties so these would be great at those too, or any finger food party you’re having.

Notes: The only chorizo I can find in my store is this ground up stuff, so I just used some cheese smoked sausage instead. I also left out the roasted red pepper so the baby would eat them. I used mozzarella cheese as the suggested substitute in the recipe.

Rachael Ray: Proscuitto and Spinach Bucatini

When I saw this Rachael Ray recipe called for fresh spinach I thought I’d try it. I’m not a fan of frozen spinach, but I like fresh spinach. I can’t explain the difference, the fresh is just better. Although I changed a few ingredients on this recipe; I really enjoyed it. Sometimes you gotta make what you can get work!

Notes: Instead of proscuitto I used bacon, my store doesn’t sell proscuitto and instead of bucantini because I can’t find it at the store either I used some left over bowtie pasta I had. Other then that I followed the recipe. I may have added a little too much pasta liquid to the garlic, red pepper, and EVOO, it didn’t thicken up real well for me. So be careful when you add the water.
