Rachael Ray: Ranch Style Stuffed Tators
I didn’t realize how close this Rachael Ray recipe was to the buttermilk smashed potatoes we had a few nights ago, but I would argue that it taste different. I love potatoes, I could probably eat them every day, but I don’t. You know who has the best potatoes? The Mall food court, I used to always get a cheese and bacon stuffed potato; then as I got older I added broccoli to that meal. Don’t knock it if you haven’t try it, but tonight we’ll have tators with cheese and tomatoes!

Notes: The recipe says to cook the potatoes in the oven, but I cooked out 2 in the microwave, it worked perfectly! I skipped out on the sour cream, as Tony Horton would say from P90X, got my potatoes, no butter, no sour cream, which these don’t have, but they do have cheese! I guess that may even it out!
- Ranch Style Stuffed Potatoes
- Ingredients
- mix herbs, hot sauce, and buttermilk
- microwave potatoes
- Scoop out potatoes
- empty potato (mostly empty)
- add milk mixture to insides and mash
- roasted tomoates
- fill the potato skin with the mashed potatoes
- add cheese
- melt cheese under broiler
