Rachael Ray: Potato Soup with the Works
I love potato soup. I think I’ve discussed how the husband doesn’t like soup so I have been making a few while he’s been out. This Rachael Ray recipe I felt like is pretty thick for a soup. I only made half, and I didn’t measure the chicken stock, but I added some more after I blended it. I also go to use my immersion blender, any excuse to pull that tool out! If you like mashed potatoes; you’ll like this one!

Total Time: 45 minutes
Notes: I let my potatoes simmer a lot longer, maybe that is why it was thicker. But there is no way 8 minutes is long enough to blend it with the immersion blender. Either way, it was so delicious!
- Potato Soup with the Works
- Ingredients
- brown bacon in heavy bottom pot
- remove bacon and add leeks and garlic to bacon fat
- add seasonings
- add potatoes
- add chicken broth and simmer
- use immersion blender to blend soup
- blend until smooth

That’s quite a soup you made there! How can your husband not like soup in general, and this soup in particular? It’s got potatoes, cheese, BACON, and all those other goodies, too! I bet your little Jackson loved it.
Michelle, I know you are moving soon. Do you plan on having a garage sale or yard sale before you move? Or maybe you could post some of your kitchen items for sale right here on your website. I’ve had my eye on some of your blue serving dishes, like the one with the potato soup! A lot of your fans would probably love to buy some of your things, especially if you dicontinue your blog. They would be like souvenirs from the year of Rachael’s recipes!

Having just discovered the joys of organic farming in our own backyard, I have to say potato soup is our favourite of the month. I found a website dedicated to just potato soup recipes, which is quite amazing when you think about it. There’s a website for anything nowadays it seems!
