Rachael Ray: Love Birds-Chicken In Pastry

We eat a lot of chicken at our house, so when I saw this recipe in Rachael Ray’s Big Orange Book I was excited to try it. It held up to all my expectations. It had some great flavors with the added jam, and was light and crispy. I know puff pastry isn’t great for you, but all things in moderation is my philosophy. Overall this was such a quick and easy meal, and I loved that it was so easy to clean up. Well, might have been a little better if I sprayed my cooking sheet first!

Total Time: 30 minutes (15-20 minutes is baking time in the oven!)

Husband Says: “This is good, good amount of flavor, I like the jelly.”

Notes: I did not use fig preserves but raspberry jelly, which was so wonderful. I also used provolone cheese, I wish I used a little more cheese then I did. So feel free to take your own liberties and use a different jam or whatever cheese you have on hand! I’m sure it’ll turn out great!
