Rachael Ray: Individual Chicken Pot Pies
This Rachael Ray recipe was perfect. The little one and I stayed in all day to avoid the increasingly cold temperatures outside. It getting so cold there is nothing like a nice hot chicken pot pie for a warm dinner. I will say the little one ate none of his and opted for a grilled cheese sandwich, which isn’t to surprising. I really loved this one, I didn’t make it so individual because my puff pastry broke, I wanted to use one sheet instead of two, so I had to improvise. It still tasted so good!

Notes: Because I had some corn I added that in, just because I wanted to use it up. I had some leftover chicken mix so I saved it for another day, another pie!

- Ingredients
- veggies
- whisk milk into butter, flour, and chicken stock
- add chicken and veggies to milk mixture
- add chicken mixture to puff pastry
- fold into pocket
- bake for 20 minutes
















The pot pie looks scrumptious. I also love how classy you always make the food look with those beautiful plates and dishes. I enjoy reading your blog each day and admire you for taking the time from your busy schedule as a wife and mother to post a daily recipe. I’m a terrible cook so your photos really help me. I totally agree with you, Peony. You have such a pretty name, by the way. How Michelle does all she does with a little one running around is pretty amazing.
