Rachael Ray: Zucchini Pizza
I choose and made this Rachael Ray recipe knowing there was about a 99% chance I would not like it. I love zucchini, and I’ve had some strange things on pizzas in Europe before, so I thought, well it won’t kill me to try it. I think this pizza might have been good to me if I put tomato sauce instead of ricotta cheese on it. If you love ricotta cheese, I bet you would like it. I do not even like ricotta cheese all that much, I can tolerate it in lasagna, with a ton of meat sauce on it, but other then that, I’ll pass. Unfortunately I wouldn’t recommend this one. That doesn’t happen very often.

- Zucchini Pizza
- ingredients
- spread ricotta on crust
- cover with mozzarella cheese
- saute zucchini
- add to pizza for the last 2-3 minutes of cooking

I totally agree. I made this tonight. And I thought I would love it! I love ricotta cheese on my pizzas, and I really really like zucchini.
I followed the recipe exactly as was written in her cookbook 365 and no repeats, and BLECH. I ate the first piece mostly because I was very hungry, but the entire time I was eating it I was thinking, ewww. My second piece is still sitting in my plate with 2 bites taken out. I just cant stomach it. And I have an entire pizza left! YUCK! This one is going in the garbage!
