Rachael Ray: Tex Mex Grilled Chicken Caesar Salad

I love Caesar salad, I try them whenever they have them on the menu, I really love spicy Caesar salads, I know it isn’t traditional. This Rachael Ray recipe kicks up the heat on a Caesar salad, it was nice and tasty, perfect after a long run! For those that may be following the eating habits of the baby, he doesn’t eat salad yet; lettuce is a little hard for him to eat, but he loved the chicken. If you love salads, try this one out!

Husband Says: “Good, cajun flavor, lime juice was good, or whatever was on the chicken and lettuce.”

Notes:Instead of making a dressing from scratch, and I just can’t bear to cook anchovy’s; I added the the other ingredients to a little bit of Caesar dressing already made. Adding those ingredients to the dressing changed how it tasted completely, but it was a good change. I did love making my own sour dough croutons, those were so good too. I didn’t make them real crunchy since the husband isn’t a fan of crusty bread! My avocado wasn’t ripe and wouldn’t soften in the microwave, so we didn’t have that, but it would have been good with it!
