Rachael Ray: Saucy BBQ Chicken Sammies and Potato Salad

Well, I’ve cooked this Rachael Ray recipe before, and I marked it in my book to try again. So we liked it the first and second time! The BBQ sauce isn’t a smokey and I would like, but over all there is good flavor. The worst part about this recipe is there are a lot of ingredients, but I guess you’re making 2 things so it makes more sense. I love BBQ, I really love BBQ brisket sandwiches, but I’m starting to like shredded BBQ chicken, so I hope you do too!

Husband Says: “The potato salad was good, very flavorful. The chicken sandwiches were good, nothing special about them, just good BBQ chicken sandwiches.”

Notes: I added the tomato paste and brown sugar and seasoning to the onions and garlic cooking, and then I mixed the chicken in with it and shredded it in the skillet. I figured why use another bowl if I don’t have to, trust me after a weekend of house guest and first birthday party, the last thing I want is another bowl to clean. I also smashed the potatoes just a tad and added a couple of squirts of mustard and mayo. The potato salad was okay, not my favorite.
