Rachael Ray: Lentillas, Mix and Match Tacos
Normally I like my tacos in a soft or hard shell, but this Rachael Ray recipe gives a crunchy feel to tacos, without the fat! Putting the taco filling in lettuce is really good. It is nice and crunchy, and better for you! I will say that usually I don’t like sauce in my taco meat, and this wasn’t an exception. It was good, but it tasted more like chili meat then taco meat. So next time, I might leave out the tomato sauce. I can’t speak on the shrimp filling because I didn’t eat that. Overall, I thought it was a fresh take on tacos that I enjoyed.
Recipe:Lentillas: Mix and Match Tacos
Cookbook: Rachael Ray 365 Days: No Repeats
Total Time: 20 minutes
Husband Says:“They were good. The only thing I would’ve done different is put all the toppings together.” (He’s talking about the sour cream and guacamole which were separate for picture purposes, he could’ve spread them out.)
Notes:Like I said above I’d leave the tomato sauce off next time. I served these up with some sour cream and guacamole, I enjoy it wrapped in the lettuce, so I would say it was successful!
