Rachael Ray: Chili Chicken and Saucy Corn Salsa

I love salsas, any kind of salsa I’ll give a try. This Rachael Ray recipe has a corn salsa, and I like the salsa a lot! Originally this recipe is for Halibut, but you’ll see no fish cooked at my house, so I switched it out for some chicken. Overall, it was okay, I liked the salsa, but maybe the chicken wasn’t the best. Which isn’t my fault, I’ll blame it on the store having some not so good chicken.

Husband Says: “The chicken is tough, it’s okay.”

Notes: As mentioned about I used chicken, I also didn’t use stock in the salsa. I didn’t have any brown sugar so I used barbecue sauce, which was enough liquid instead of stock. All in all, I could eat spoonfuls of the salsa, it would’ve been better if I added tomatoes and avocado. Maybe next time, or I’ll just make it to eat sometime.
