Rachael Ray: Butternut Squash Mac and Cheese
This Rachael Ray recipe I think Rachael Ray makes for her dog. We have a dog, but he does not get to eat people food. That is something I don’t want to start with him, he’s mostly an outdoor dog, so no sitting under the table for him waiting for food. I have never worked with Butternut Squash, but I couldn’t find a box of Butternut Squash at 2 grocery stores. I looked it up and supposedly it is a seasonal vegetable. I bought a fresh one. My mom told me they are hard to work with, she was right. She suggested I microwaved it, so I did, then I cut the skin off and pureed it. I assumed it was to be purred since the sauce was supposed to be smooth. Overall, this mac and cheese was excellent! The little guy loved it!

Notes: Other then using fresh butternut squash, everything else I did the same. Sorry for the lack of my first 2 pictures, card troubles again. I think that is all straightened out now!
- Butternut Squash Mac and Cheese
- add flour to onion, oil, and butter
- add chicken broth
- add squash
- add cheese and stir in a figure 8 motion
- season with salt, pepper, and a touch of nutmeg
- drain macaroni well
- mix all together
















do you have the “baked version of this recipe” i saw it on Rachels 30 minute meals show
It might be in her cookbooks, but I haven’t looked for it. I’m sure it’s available online. I might have to check into it. It was pretty good!
