Rachael Ray: Super Stuffed Potatoes with the works

This is a pretty straight forward Rachael Ray recipe. In fact, I’m pretty sure she didn’t create it! There isn’t anything to special, just a potato with sour cream, cheese, bacon, and chives. I choose to make this because the baby and I love potatoes, while the husband does not. Luckily, he spend tonight in his home town honoring his old coach, so we had potato night. Which is nice because it is a low maintenance meal, and when you’re by yourself with a 1 year old, it works!

Notes: I didn’t do anything different, I thought about adding some butter for Rachael’s friend Paula Dean, but I decided I’d go without. Surprisingly I didn’t miss it at all!
