Rachael Ray: Lemon Pepper Chicken
This Rachael Ray recipe took me back to my junior year of college. One of my roommates and I would always make Lemon Pepper Chicken. I don’t think that I have made or wanted Lemon Pepper Chicken since that time. We seriously ate it all the time for lunch; with some broccoli cheese rice. Not that it wasn’t good, I might have over done it. Well, it has been long enough, and making this fresh marinade is nothing like the spice we used to sprinkle on our chicken. This is a great fresh tasting summer recipe.

Notes: The recipe in the book calls for chicken tenderloins, and the recipe linked calls for garlic. I didn’t use garlic and I couldn’t find chicken tenderloins at the store; plus since there is only 3 of us, I just made 3 breast. Everything else I did the same, it was wonderful! I served this up with my grandmother’s recipe for broccoli and cheese.
