Rachael Ray: Green Chili Quesadillas

These sounded so good in Rachael Ray’s book. You know I love my Mexican food, and I really have learned to love Poblano Peppers, so that is the pepper I choose. Quesadillas are one of my favorite meals; I think because they are easy to make and easy to clean up, and easy to eat. Usually I stuff them with chicken, cheese, peppers, and tomatoes, so this was a change. A vegetarian meal every once and a while is good for you, and your pocket book!

Total Time: 20 minutes

Husband Says: “They were good, the green sauce (salsa verde) was spicy. The green peppers fell out a little, more cheese might have helped that.”

Notes: I probably should’ve roasted the peppers a little more then I did, or maybe even sauteed them to soften them up a bit. I do wish I had some sour cream or guacamole on hand, that would’ve made them surperb! I love making these up with my panini maker, that makes it so easy!
