Rachael Ray: Stuffed Peppers with Beef, Rice, Spinach, and Cheese

This Rachael Ray recipe is a roll-over meal from the Spanish Beef and Rice the other day. It is great because most of the cooking is already done. Right now, these recipes are my “best friend!” I love how the flavor changes a little bit by putting the Spanish Beef and Rice in a pepper, so you don’t feel like you’re eating exactly the same thing.

Notes:

I used a poblano pepper, because I like them the best! And I used fresh spinach left over from the salad the other night.

Sounds yummy.. My hubby came home with all kinds of peppers from someones garden.. I have had no idea on what to do with them. I think I may try to stuff them with this recipe. However I think my ADD kicks in because RR recipes are so detailed and so many indgreidents!

  2. Thank you so much, this was very interesting. I was actually born in Spain ( not telling what year though!) but was moved around various parts of europe and finally settled in England when I was a teenager. I dont remember an awful lot of the few years I was in spain, but the smell of spanish food always seems to ring a bell in me or something. Funny, how I dont remember anything except the smells, isn’t it! I even found a whole website dedicated to spanish recipes, which gave me great delight and thought I ought to share with your readers. Anyway, thank you again. I’ll get my husband to add your cast to my rss thing…

I like to cook and post about it in this blog. In 2009, I cooked a Rachael Ray recipe everyday for my family. You can check out the featured receipe from 2009. Here's hoping this blog makes your lives a little less work and more enjoyable!
