Rachael Ray: Mega Meat Stuffed Shells
I don’t make a lot of stuffed pasta recipes, but I thought this Rachael Ray one looked pretty good. I’m not good at stuffing pasta, and I’ve never attempted to stuff the shells. I think I could have boiled the shells a little longer then I did, but overall none of my shells broke, and they are a lot easier to stuff then the manicotti! I was very pleased with the results! I would definitely recommend making this one, I really loved it! This was basically a meatball stuffed shell, so if you like meatballs you’ll like these.

Notes: I really don’t like frozen spinach so I chose to use some fresh leftover spinach that I had. I don’t know what it is, but I can eat fresh spinach, but not the thawed out frozen stuff. That’s the only difference I had in my stuffed shells. Oh I guess I just used ground beef, not the meatball mixture. That’s too many different meats to buy in my opinion. This made more then 8 shells for me, maybe mine were smaller.
- Mega Meat Stuffed Shells
- Ingredients
- brown beef with onion and garlic
- add in spinach
- stir in breadcrumbs, cheese, and 1 egg
- mix together
- boil shells until almost done, still hard in the middle
- pull out of water
- stuff shells
- top with cheese
- heat garlic in EVOO
- take out garlic and add red pepper flakes
- add tomato sauce
- add parsley
- bake shells until edges brown























I’ve been working through Rachael’s “Meals for a Steal” recipes, but I must say, this looks pretty tasty…I’m gonna give it a try!
